The verdict

If you could keep only one winstub, the traditional Alsatian tavern, to understand what the word means, it would be this one. Since 1873 the room at 10 rue du Sanglier has not changed its soul: dark panelling, checked tablecloths, yellowed photographs on the walls and waiters who know the menu by heart because it barely moves. Jacques Chirac had his table here on every visit to Strasbourg, and this is still where locals bring the guests they want to impress. A safe bet in the most literal sense.

What to eat

The Alsatian repertoire in its canonical form: choucroute garnie, sauerkraut cooked with riesling and piled with pork, then ham hock, Alsatian foie gras, coq au riesling and house made spaetzle, the small local egg noodles. Portions are generous, the execution steady, and the Alsatian wine list matches the house. This is not the table that reinvents the genre: it is the one that defines it.

Visiting tip

Out of season, book two to three weeks ahead for a weekend evening. During the Christmas market the house suspends all bookings and serves in the order people arrive: turn up before 7pm, or try weekday lunch, which is far calmer. The Google rating of 4.3 on more than 3,000 reviews says how steady the place stays despite the tourist flood.
